Spiedini di Rosmarino con Funghi

Mushrooms on Rosemary Skewers



For all of the gardeners whose rosemary plant turned into a bush turned into a shrub....make spiedini! These grilled mushrooms are delicious served with roast chicken, grilled fish, meatloaf, steak...or with some warm crunchy garlic bruschetta.


 
Serves 4
  •  

    fresh mushrooms, cremini, porcini or your choice

  •  

    fresh rosemary stalks, select mature branches if possible

  •  

    extra-virgin olive oil

  •  

    sea salt to taste

Clean the mushrooms, then thread onto rosemary branches. Roll in oil to coat, then grill or broil for about 2-3 minutes per side. Season to taste and enjoy.
