Check into your hotel in Bologna’s Historic Center. Late afternoon Insider’s Walking Tour seeing what makes Bologna so special with its Romanesque palazzi and Gothic basilicas built along its famous archways, called porticoes. Outdoor dining at Bologna’s best traditional restaurant for our Welcome Dinner.

Shopping in Bologna’s outdoor food market and its best stores for Italian cookware is fascinating and offers important additions for your kitchen! Onto our palazzo and cooking in our professional kitchen with Mary Beth and Italian chefs...In our first class, you’ll make the best pasta you’ve ever tasted with our professional pasta chef! Taste the Difference in our Aged Balsamic Vinegar Tasting and Regional Prosciutto Tasting.

Later, cook alongside the chefs making our full-course lunch of antipasti, ragu with the fresh pasta you made, delicious main dish with seasonal vegetables and dessert, all paired with special wines. There is always something new to experience in Bologna for your evening at leisure.

You’ll learn easy techniques from a remarkable Italian chef who specializes in Mediterranean cooking. Together, we’ll make fabulous dishes - seafood antipasto, gnocchi with a delicious sauce, savory fish for the main dish and a scrumptious dessert everyone is going to love! All paired with Italian wines for our memorable Mediterranean lunch. Evening free - Bologna has some fun jazz clubs.

"We want to thank you for the won-
derful time we had at the Taste of Emilia-Romagna course. We made quite a few of the recipes and they were delicious! We remember all the tastes of Bologna with great fondness." ~ Paul & Deborah R.,
North Carolina

"Not only was the experience a cooking class, but it transcended into a cultural immersion. I learned a lot of special dishes, I feel changed in my perception of Italian food and the process of preparation...from being in the kitchens, to the markets, to observing the love that goes
into an excellent cheese. You're
the best." ~ Debbie C., Ohio

What a memorable day as we drive through the Emilian countryside to our estate visits! All of our visits are exclusive and behind-the-scenes, and are not available to tourists. Watching the cheese master stir hundreds of gallons of milk in copper cauldrons and transform this into golden Parmigiano-Reggiano, then tasting this special aged cheese with him, is fascinating! Later is our private visit at a family-owned award-winning traditional vinegar attic, called an acetaia, near Modena. You’ll learn the fascinating process of Aceto Balsamico Tradizionale di Modena, for aging balsamic vinegar in heirloom wooden barrels. A once-in-a-lifetime tasting with these award-winning producers!

We’ll visit Modena, one of the most influential cities in Emilia-Romagna, and see Il Duomo, a masterpiece of Romanesque architecture. Taking more than 3 centuries to complete, this cathedral, along with its adjacent Gothic bell tower called La Ghirlandina, is a UNESCO World Heritage site.

Lunch is a stellar food-and-wine pairing experience at an outstanding two Michelin-star restaurant. Arrive back in Bologna in late afternoon so you can attend an evening musical event or stroll through the Historic Center enjoying our wonderful city.

Morning for sipping a cappuccino in sunny Piazza Maggiore, perhaps some last minute shopping. Grazie Mille ~ Buon Viaggio!
