Everyone loves pizza! Once you taste Italian pizza baked in a wood-burning brick oven, no other pizza compares. If you have wanted to make outstanding authentic Italian pizza - thin crust, thick crust, schiacciata, stuffed calzones, stromboli and more - now is an exceptional opportunity. Learn professional recipes and techniques from our extraordinary Sicilian pizzaiolo and Amalfitano chef. Two professional chefs teach you the two types of Italian pizza, slow-rising thin crust and quick-rising thick crust. These two doughs are different and each type is used in many ways that you will learn with the chefs.
During this course, you will be in Emilia-Romagna, the culinary region that produces world famous Parmigiano-Reggiano, prosciutto di Parma and balsamic vinegar, so of course we'll cook with these delectable ingredients. Called "The Gastronomic Capital of Italy" by Italians, Bologna is famous for its delicious cucina and stores filled with wheels of cheese, olive oil and all kinds of salumi. Our outdoor market continually entices with mounds of ripe fruits and fresh vegetables, all locally-grown. It doesn't get any better than this - we mangia bene! We'll immerse you in "la cultura e la cucina" by dining in local restaurants, traveling in our lovely countryside and making the best pizza you've ever tasted.

- You learn professional techniques for all stages of making great Italian pizza. We'll begin with making special yeast dough specifically for traditional pizza and schiacciata, plus a special tomato sauce just for pizza. We'll prepare different types of regional pizza with various toppings and serving styles. You'll learn how to build the fire and maintain it for baking pizza in a wood-burning oven. Then practice with the chef using the peel while making many pizzas together.

- Modena joins Bologna in having a gracious Historic Center with beautiful palazzos and charming porticoed streets filled with boutique shops. In its main piazza is the masterpiece of Romanesque architecture Il Duomo, dedicated to San Geminiano, and its massive Gothic bell tower, long a symbol of this city. Modena's most important monument, this cathedral is a UNESCO World Heritage site. The city is also the Italian center for balsamic vinegar. Concluding our visit to Modena, we'll enjoy an amazing food-and-wine luncheon at a famous Michelin-star restaurant with the renowned chef.
